SharePoint Packages (Compatibility Issue ) :

Best = SharePoint Server 2010 + Office 2010
Better = SharePoint Server 2010 + Office 2007
Good = SharePoint Server 2010 + Office 2003

You don’t HAVE to have Office at all if you don’t want – SharePoint Server will do LOTS of cool stuff without the client at all – it’s just that the ‘better together’ story is so strong with the integration points.
For SharePoint Designer:

Compatible = SharePoint Server 2010 + SharePoint Designer 2010
NOT Compatible = SharePoint Server 2010 + SharePoint Designer 2007 !!

Compatible = SharePoint Server 2007 + SharePoint Designer 2007
NOT Compatible = SharePoint Server 2007 + SharePoint Designer 2010 !!
